Grant hasn't fought in almost a year because of continuous concussion symptoms. So that's understandable, no one knows how long it'll be till he returns to The Octagon.
Diaz, has fought pretty recent. Just last November he knocked out Gray Maynard.
According to UFC officials, Diaz has turned down multiple fights.

Before they were both removed, Grant was sitting at #3 in Lightweight and Diaz was sitting at #5 in Lightweight.
Grant's removal was understandable. Diaz's, not so much.
